First published Tuesday, November 18, 2014 The University awarded a contract for Allpax gentle motion agitation retort to Allpax Products LLC, Covington, LA, for an amount not to exceed $293,378. This retort is needed to commercially sterilize various food products in the Food Science & Human Nutrition (FSHN) Pilot Plant for several different products. It will be used in a small-scale production environment which mimics an industrial process that utilizes gentle motion agitation. We plan to be able to run small-scale trials where data can be translated to these industrial production lines. Additionally, we plan on performing research trials on this form of agitation as a comparison against rotary style agitation. Our facility already has access to a rotary style retort, so a gentle motion retort is required for comparison purposes. The University has determined that this purchase is only economically available from this source because the items are required for research and no other source is able to meet the researcher's documented needs.
