Statement of Work Nutrition Food Service Double Oven
Nutrition and food service is in need of a Double Electric Oven that can cook food for over 100 veteran patients at a time. Location for this double oven is the DOM satellite kitchen area. This requirement is for a commercial combination oven.
Salient Characteristics:
Injection steam system where water is injected onto the heating elements for steam cooking and it is distributed by the oven fan.
Easy to use touchscreen control and easy to operate even for inexperienced kitchen staff.
Multiple cooking modes like hot air, combiSmart, CombiOptimal, retherm steaming, low-temp steaming, forced steaming, proofing, preheating.
Automatic humidity pulsing
The ability to store recipes with up to 15 steps each
USB port for recipe transfer
Manual or automatic cooling
External core temperature probe
Rack timing allows for setting individual timers for each rack
Capability for recording and documenting production duration and preparation temperatures and core temperatures
Ovens also must have the capabilities to work independent of each other if one is not in use or is cooking a different product.
Have a reversible 9 speed fan for optimum baking and roasting results and ability to cook overnight.

Water and chemical cleaning hook-ups
Automatic Combiwash, closed circuit cleaning system features very low water and detergent consumption and no contact with chemicals. No proprietary chemicals required. NAVAHCS uses Ecolab cleaning products only in its kitchens and oven must be able to be cleaned by this product.

The double oven should hold( 5) full size sheet pans
OR ( 10), 12x20 full size hotel pans.
Unit shall have the ability to cook with injection steam, hot air or a combination of steam and hot air.
The measurements of the unit desired due to space is 44.17 inches wide, 37.44 inches deep, over all height on the double unit is 69.76 inches.
It will need a stand to fit the Double unit. 11-1/4 tall stand with casters and casters need a lock on at least two.
